As with many refreshing fruit drinks, agua fresca has a long and varied history across Mexico and Central America. Traditionally, these beverages are made by blending fresh fruit with water and a touch of natural sweetener, offering a light, hydrating alternative to sodas and other sweetened drinks. Cherries, though not native to Mexico, were incorporated into the recipe over time, adding a vibrant color and naturally sweet flavor. Sweet Cherry Agua Fresca became popular at summer markets and family gatherings, celebrated for its ability to cool and refresh on hot days. Today, it’s enjoyed worldwide as a simple, fruity, and naturally delicious drink that pairs perfectly with meals or stands alone as a thirst-quenching treat.

Prepare the Cherries: Wash and pit the fresh cherries. If using frozen cherries, allow them to thaw slightly before blending.
Blend Ingredients: In a high-speed blender, combine the pitted cherries, 4 cups of cold water, sugar (starting with 1/4 cup), and fresh lime juice.
Blend Until Smooth: Secure the lid and blend on high for 60-90 seconds, or until the mixture is completely smooth and liquefied.
Taste and Adjust: Carefully taste the mixture. If it's not sweet enough for your liking, add more sugar one tablespoon at a time, blending for a few seconds after each addition to fully incorporate.
Strain the Mixture: Place a fine-mesh sieve or a cheesecloth-lined strainer over a large pitcher or bowl. Pour the blended cherry mixture through the sieve, using a spatula or the back of a spoon to press against the pulp to extract as much liquid as possible. Discard the remaining solids.
Chill: For the most refreshing experience, cover the pitcher and chill the agua fresca in the refrigerator for at least 30 minutes, or until cold.
Serve: Fill serving glasses with ice. Pour the chilled Sweet Cherry Agua Fresca over the ice and garnish with a fresh mint sprig and a lime wedge, if desired. Serve immediately.

Note
For a fizzy version, substitute half of the water with sparkling water just before serving.
